Brussel sprouts cut in half, tossed with olive oil, salt, pepper then roasted in the oven. So easy, so lovely, and so YUMMY

I love zucchini and could eat it every day. I dice, saute and add to eggs; I julianne and stir fry in olive oil, season with basil and oregano, just until tender. The best!!!

I love eggplant...and my favorite way is in Ratatouille...although I like it grilled with peanut sauce as well.

I love beets! I use the leaves the same way I would swiss chard, in my eggs or in a stirfry. The beets themselves are delicious in a veggie bake. I usually make these in the fall/winter with potatoes, sweet potatoes, carrots, squash, etc. Cut them all up into cubes with sizes based on how long they take to cook. Toss in olive oil, salt and pepper. Put on a baking sheet or in a pyrex dish and cook at 350 til you can poke them with a fork. Serve over quinoa or your favorite grain. It's yummy!
